My Foodie Side…”Homemade” Sesame Chicken & Fried Rice

For some people, time off from school means rest and relaxation. In our home,  the minute the bell rings, excitement with a heavy dose of anxiety fills the air. Why, you may ask; as the mother of 4 growing boys the daily menu is what it’s all about. My boys are asking what’s for lunch, while they are eating their breakfast. The same goes for dinner.

Hope you enjoy my dish!

You start with a couple of pounds of fresh boneless chicken breast cut into cubes and a bag/box of Tempura Batter Mix (Kikkoman variety shown here).tempuraMix Tempura flour with water and ice cubes for best coating.                                                                                 Add chicken cubes and dredge in tempura batter; Fry in vegetable oil until chicken is golden brown.

Toss tempura battered and fried chicken in homemade sauce (recipe to follow) until all the chicken is covered nicely.

Drizzle with sesame seeds and pair with delicious homemade fried rice (recipe to follow) and you are in for a real treat!

Sesame Chicken Sauce

Stir the below ingredients over a low flame until the sauce thickens. Pour over tempura fried chicken and toss until chicken is coated evenly.

  • ½ teaspoon salt
  • ¾ cup sugar
  • ¼ cup apple cider vinegar (or whichever you have on hand)
  • 7 cloves of garlic, minced (or 1tsp garlic powder if fresh is unavailable)
  • 4 teaspoons ketchup
  • 4 teaspoons soy sauce
  • 1-2 tablespoons honey
  • 1/4 cup water
  • add flour to thicken (2 tbsp)
